Cuvée Prieure Cru Classé Rouge 2012

A la vigne :
This vintage high-end wine is produced in limited quantity and comes from a selection of our best plots and meets the most stringent production to get the best grapes. Caring about the environment, emphasis is placed on cultural practices such as plowing the soil and maintaining grassy areas adjacent to the vines. These practices are intended to maintain fauna and flora, and therefore guarantee the health of the soil. We are conducting a fruit volume control then returns to stripping in order to ensure maximum sunlight in each cluster.

Récolte :
The grapes are harvested from late August to late September and the fermentation is done by grape variety. This wine comes from a selection of our best plots.

Vinification :
Harvesting is carried by a conveyor, avoiding the deterioration of the berries, then de-stemmed, and underwent a double screening. The fermentation takes place partly in wooden vats and partly in stainless steel vats with maceration pre-fermentation cold. Fermentation lasts about 1 month of daily juices backing up which allows controlled extraction of tannins, a guarantee of finesse and concentration. Aging takes place in barrels for 12 months and again in wooden vats for 6 months to enable balance of the final assembly.
