A la vigne :

Vinification :

All steps are done under nitrogen atmosphere to avoid oxidation.
Temperatures are controlled and kept at 18 ° C to maintain the fermentation, which extends over several days (10-14 days). Once it is completed, the wines are chilled to block malolactic fermentation then aged on lees in vats with stirring. During December, the wines are tasted to determine the final blend and bottling.
