The art of wine tasting:
Tasting a wine consists of judging all of its organoleptic traits, separating them and defining their intensity.
This analysis consists of three phases :
- The visual examination in order to determine the consistency, the clarity and the colour of the wine (not so simple when tasting "blind"). These are basic criteria which can influence our judgement in a subjective way.
- The olfactory examination through which we enter the rich and diverse world of aromas. These aromas result from a mix of volatile substances originating from the grape variety, the fermentation of the grape, the maturing of the wine ( in stainless-steel vats, barrels, etc.), in addition to its evolution over time (ageing).
- The taste examination which allows us to distinguish the different flavours as well as tactile sensations such as oils, tannins and the duration in the mouth.
All this has a common aim ; to judge the qualities and faults of the wine via the balance of all its elements.
